Brandy Snaps Cannoli







Instead of filling Brandy snaps with cream, I like to fill them with ricotta, like the Sicilian Cannoli. Today I chopped a few pieces of candied fruit (green melon and papaya, because I didn't have any candied citrus fruit) and mixed it with ricotta. I also added 1 tsp of vanilla icing sugar (icing sugar kept in a tin with a vanilla pod) and then I wanted to add 1 tbsp of orange blossom water, but it was out of date, so I added rose water instead. I will use the old orange blossom water for my bath (why through it away when you can have a sweet smelling bath!). I thinned down the ricotta with a little milk until it was soft, and piped it inside the Brandy snaps. But you don't have to stick to this recipe: add what you like, for example chopped dark chocolate, ground pistachio nuts, a little cinnamon... anything that sounds Mediterranean! I hope that you will like the idea!

  2. I love the ricotta cannoli so much I NEVER order the custard ones any more ... All your variations sound amazing - my only problem will be which one to try first. Although I love the citrus best of all ...

    1. I still have the custard ones, but they are those made with sweet puff pastry and shaped like a cone, so quite different from the Sicilian cannoli. I like the custard ones for breakfast :-) with a cappuccino.

  4. Gorgeous! Such a simple but lovely idea. I love brandy snaps, and filling them with ricotta would be such a nice change. Candied fruit sounds sweet ... but then your mention of dark chocolate and cinnamon sounds irresistible!

  14. That's a nice and easy recipe! I'm not a huge fan of brandy snaps, but could give it another go if filled with ricotta instead.

    And if you still have some of that orange blossom water left, I wonder if you could add it to a base oil like jojoba or almond oil. Maybe it could make a nice smelling massage oil or even a summery smelling natural 'fragance'? :-) x

    1. I think that it may be too watery to add to an oil, or to use as fragrance, but maybe it could do well as a hair rinse :-).

  16. Wonderful idea - I've been putting off making brandy snaps as I find the cream filling too sickly but this may be the perfect recipe.
