Bence makes strawberry risotto





 Bence and Judit are visiting from Japan (btw, they are Hungarians, not Japanese), and last night Bence made us a yummy strawberry risotto. He chopped half a onion and cooked it in butter and olive oil, then added 500g of carnaroli rice and a glass of white wine. He chopped a punnet of strawberries and added them to the rice and, always stirring, added about 1.5l of vegetable broth, ladle by ladle. At the end he added some grated parmesan cheese and topped the risotto with chopped parsley. More parmesan and some freshly ground black pepper were added to the plates. It was a super delicious risotto, thank you Bence!

  3. To be honest, I was rather nervous: making risotto in the home of an Italian chef seemed to be a rather brave thing to do... But it worked out well, fortunately. Alessandra was very supportive and the kitchen was just great; sunny and friendly.

  5. Ciao Ale!! Mi fate un'invidia in maglietta e pantaloncini. Per non parlare delle fragole che usate... qui torneranno fra qualche mese e quelle "finte" non mi va di comprarle. Deve essere una delizia quel risotto :-) Bacioni!!

  8. The strawberry risotto was very popular in the 80s, but I still love it, especially when the strawberries are in season. Enjoy your sun and your summer, today we have a sunny winter day and the sky is perfectly azure :-D

  11. This is really special and creative. Cook risotto with strawberry. I might cook oat with strawberry, but never think of cook it with rice. This probably means I can try other fruits such as mango or pineapple. :)

    1. I wouldn't go as far as using mango and pineapple, they have a distinctive taste, and remember that you are adding parmesan cheese, butter and vegetable stock to this risotto, it is savory, not a hint of sweet or acidic here.

  15. What an unusual combination - I thought it was going to be an upmarket version of creamed rice ie a dessert dish, but it sounds even better as a main course!!

  19. That combination is new to me too, Alessandra, but I can imagine it would work because strawberries don't have a very distinctively fruity, sweet taste when there is no sugar involved.
    I've been enjoying beetroot risotto lately, which is delicious - and of course I love the colour!
