Taste Matakana Pasta Workshop







Last night I took a pasta making workshop at Taste Matakana, in Warkworth.  The students were all lovely ladies (no men! Usually there are always men at my pasta workshops, they like the pasta machine!) and very confident cooks too. It was a pleasure to teach them, and to get to know them.


We were a bit too busy mixing dough and rolling pasta, and talking, and I forgot to take photos, (also, my hands were full of flour). I took out my iPhone only at the end, when we were eating...



We made different types of pasta: plain, coloured, filled, with herbs, with roses... and a couple of simple pasta sauces. Below some images of the leftovers!




Thank you Andrea for organizing the class, to all the staff at Taste Matakana, and to my enthusiastic students: I hope that last night you went home inspired, and that you will make fresh pasta very soon!

  2. I saw a pasta machine on TradeMe for much cheaper than the one sold on some kitchen appliances stores the other day but I don't know about the quality. I'd like to try to make gluten-free pasta.

  3. Oh that looks like such fun...and I have only once made pasta by hand and not with a machine..hard work!!

    Great photos!

    As much as I love the pasta views..I am very partial to that lovely pink and white dot apron with the ribbon..very smart.

    ma c'era anche la mitica arfi? la leggo e soprattutto guardo spesso, fa delle foto incredibili.
    e e fa degli splendidi piatti senza glutine!

  10. No Gaia, Arfi vive molto piu' a Sud, questa era ad un'ora e mezza da casa mia, quindi 3 ore da casa sua. Piuttosto Arfi vorrebbe fare la pasta senza glutine, tu che farina usi?

  16. sulla pasta fresca senza glutine la situazione non è semplice.
    io uso farine di farmacia, ma a dirla tutta, nessuna mi ha soddisfatto al 100%. ho provato la schar per pane & pasta, che ha un buon sapore ma è un po' troppo secca, e la biaglut, che invece dà risultati più elastici ma è meno buona.
    nessuna delle due è una soluzione ottimale, e poi non credo si trovino lì da voi.

    ci vorrebbe un mix di farine naturali. ci sono olga felix di uncuoredifarinasenzaglutine.blogspot.com che sono bravissime e hanno tanto sperimentato. loro suggeriscono di usare il mix di farine naturali per pasta fresca, ovvero questo:

    * 100gr di farina di riso
    * 250gr di Amido di Mais
    * 250gr di Fecola di Patate
    * 10gr di Xantano
    * sale qb

    il problema è lo xantano (xanthan gum) che non si trova dappertutto

    spero di essere stata d'aiuto
