Black chia and nori 'caviar' (vegan caviar)

 


This is probably my preferred way to use chia seeds:

Black chia seeds, about 2tbsp, ground nori seaweed (two sheets, you can grind them with a blender), one or two tbsp if Japanese soy sauce, 2 tbsp olive oil. Mix in a jar and add water to cover plus a little (for the chia to soak). Let it rest overnight. It lasts for at least two weeks in the fridge, possibly more.

Don't ask me if it tastes like the real caviar because I have never ate it and I wouldn't know, but it does taste good :-). Perfect for parties!

Dandelion nuggets


If you are into foraging you will love these dandelion nuggets 💛

Pick and wash nice fat dandelions. Make a batter with eggs, breadcrumbs and a pinch of salt. Fry in oil on both sides until lightly golden, then bake in the hot oven for a few minutes until puffy and very golden. 



Serve, decorated with fresh dandelion petals. If you have children they will love these! Make plenty!

Edamame Basil dip

 This is so easy: I used frozen edamame beans, blanched them in boiling water and then blended them with garlic, fresh basil, lemon juice, extra virgin olive oil, salt and pepper. Keep a few whole edamame for decoration. Tip: the more oil the better (for me, I love olive oil!)
